Casatiello Napoletano

Casatiello is a tradional rolled bread from Naples. We watched a cooking show on TV the other night and decided to give casatiello a shot. Needed items? Pizza dough, cubed cheese, cubed meat (salami, ham, your choice), butter and 5 eggs. The chef strolled in the kitchen, put on a granny apron and rolled up his sleeves to make his capo lavoro. I sat back, thanked the chef for coming and watched as he worked his casatiello magic:

The chef took a step back, eyed the rest of us in the kitchen with a look that said a thousand words but he didn't utter one. I got the point: he needed space to kneed. We backed up and continued watching as he kneeded, flipped and beat the dough till it was smooth and perfect. Click on the blog to see the following video. A few raw eggs plunked ontop of the roll. Baked eggs they call it and they are supposed to taste  infused with the cheese and meat from the casatiello.
